1. Anchovy and butter toast

2. Classic Gilda

Originating from Bar Vallés in San Sebastián, the gilda is the most iconic pintxo of the Basque Country and the perfect demonstration that three good ingredients need nothing more. On a toothpick: pickled guindilla pepper, manzanilla olive, and a Cantabrian anchovy rolled or folded upon itself.

The gilda works because the three elements balance each other: the spicy acidity of the guindilla, the fatty and salty flavor of the olive, and the umami intensity of the anchovy. Removing any of the three breaks the balance.

The keys: Ibarra guindilla peppers (the authentic ones, in vinegar, not excessively spicy). Manzanilla olives, not stuffed. Anchovies of minimum caliber 00 — a small anchovy gets lost in the gilda. The order on the toothpick: guindilla, olive, anchovy. The anchovy always last so it's the first thing you bite into.
