Our history
Teo Cagigal, master of salted fish
Teo was the one who laid the foundations for our way of working at the Mercat del Ninot: rigorous selection, traditional curing and close service to neighborhood restaurants.
With him we learned to respect the timing of salted cod and to treat each piece as unique.
Lalo and Teo: the relay that gave Bacalalo its name
September 1989.
That date would mark the personal and professional trajectory of Laudelino González (Lalo) . At just twenty years old, he arrived from his hometown in Palencia to the big city of Barcelona, without prior experience but with a great desire to work and learn.
It was then that he started at Teo's salted fish stall, located in the old Ninot Market , where, under the guidance of Timoteo Cajigal, he learned all the secrets of the trade.

Teo taught him, above all, the importance of providing good service to the local restaurants, which he contacted daily by phone. After several years of hard work and after Lalo had consolidated his training, it was time for Teo to retire. It was then that Lalo took over the business, renaming it as it is known today: Bacalalo .

Over the course of more than 30 years, Bacalalo has undergone a great transformation: from being a small market stall to becoming one of the most modern and prestigious cod stalls in Barcelona , located in the renovated Mercado del Ninot .
Today, Bacalao has a team of 20 professionals , all committed to the same philosophy and objectives: the pursuit of excellence, a passion for cod, and the highest quality of service to meet our customers' needs.
Specialists in Cod and Anchovies
At Bacalalo we specialize in cod, Cantabrian anchovies, salted fish, preserves, smoked fish and, more recently, we have added to our selection of star products a carefully curated variety of homemade prepared dishes .
We like to think that we are experts in treating all our customers with professionalism and friendliness, both hospitality professionals and those who visit us daily at our stall in the Ninot Market in Barcelona .
