No sous vide machine? Valid alternatives
If you don't have a sous vide cooking machine (Anova, Joule, Sansaire), you can achieve very similar results with these methods:
Pot + thermometer: Fill a pot with water at 56°C (monitor with a digital thermometer). Maintain the heat by adding hot water or reducing the heat according to the thermometer. It's laborious but functional.
Rice cooker or multicooker on "warm": Many appliances maintain 55-65°C in warm mode. Check with a thermometer and adjust times.
Ziplock bag: If you don't have a vacuum sealer, use Ziplock bags submerged with the "water displacement" technique (you introduce the bag into the water, leaving only the opening out; the water pressure expels the air before closing).
Common mistakes with sous vide kokotxas
Even with a controlled technique, there are mistakes that can ruin the result:
- Improperly calibrated water temperature: Check with an independent thermometer. Low-cost machines can have a 2-3°C deviation.
