Step-by-step: odor-free oven-baked sardines (en Papillote method)

Step 1: Preheat the oven to 200 °C (390 °F). The oven should be at temperature before putting in the sardines. This reduces cooking time and, consequently, the time the vapors are active.

Step 2: Prepare the sardines. Wash them thoroughly under the tap, then pat them dry with kitchen paper. Season with salt, pepper, and a drizzle of olive oil.

Step 3: Prepare the packages. Cut rectangles of aluminum foil (or parchment paper) approximately 30x40 cm (12x16 inches). Place 3 sardines on each rectangle. Add lemon slices, sliced garlic, and a drizzle of oil. Seal the packages by folding the edges inwards, making sure they are tightly closed so no steam escapes.

Step 4: Bake for 12-15 minutes. Place the packages on the oven tray. 12 minutes for small sardines, 15 for large ones. Do not open the oven during cooking.

Step 5: Open at the table. Remove the packages and open them directly onto each diner's plate. This way, the aroma dissipates in the dining room, not in the kitchen.

3 proven methods for odor-free sardines

Method 1: En Papillote (the most effective)

This is the method described above. Sardines are cooked inside a sealed package that traps 90% of the vapors. Result: steamed/baked sardines, very juicy, with minimal odor in the kitchen.

Method 2: Salt crust

Completely cover the sardines (uncleaned, with scales) with a thick layer of coarse salt moistened with a little water. Bake at 220 °C (425 °F) for 18-20 minutes. The salt crust hermetically seals the sardine, absorbs any fat that comes out, and virtually eliminates all odor. When the crust is broken, the scales and skin come off with the salt, leaving the flesh clean and perfectly seasoned.

Method 3: Salt bed on a tray

If you don't want to wrap or make a crust: cover the oven tray with a 2 cm (approx. 0.8 inch) layer of coarse salt. Place the sardines on top. The salt absorbs dripping fat and significantly reduces odor (it doesn't eliminate 100% of it, but reduces it by 60-70%). Easier, less effective than the other two.

Extra tips to eliminate odor

  1. Vinegar during cooking: Place a pot of water with a splash of vinegar boiling on the stovetop while you bake the sardines. The vinegar steam neutralizes trimethylamine.
  2. Lemon in the oven: Place half a lemon cut side up on the tray next to the packages. Citric acid absorbs odors.
  3. Cross ventilation: Open windows before you start cooking and leave them open for 30 minutes afterward.
  4. Activated charcoal: If you have a container with activated charcoal in the kitchen, it will absorb residual odors overnight.
  5. Ground coffee: A plate with ground coffee (used or new) on the counter absorbs odors for hours.
