Freshly caught cod: Gadus morhua freshly caught, never frozen or cured. White, with a delicate texture and mild flavor. Available only in season (October to May) and much less common in Spanish markets than in Northern European ones. It is the most expensive and has the greatest price variation.

Thawed fresh cod: Cod that has been frozen on board (at -18°C or less) immediately after capture and thawed for sale. Legally, it must be labeled "thawed." In terms of quality, it is practically the same as freshly caught if thawed correctly.

Desalted "fresh" cod: In popular language, "fresh cod" sometimes refers to salted cod that has already been desalted. Technically incorrect but very common. Not to be confused with actual fresh cod.

The Season

North Atlantic cod has a distinct seasonality. In Spain, the best quality fresh cod is mainly available between October and May. Out of season, fresh cod available is almost always thawed.

The Cut

Belly (Ventresca): The ventral part, fattier and with more gelatin. Medium-high price due to its special texture.

Head and cheeks (carrilleras): The cheek (cococha) is a highly valued cut in Basque cuisine and increasingly across Spain. High price due to its relative scarcity and unique texture.

Whole, uncleaned cod: The most economical per kilo but requires cleaning. Lots of waste in bones, head, and skin.

North Atlantic cod (Gadus morhua) is the most highly prized. The main fishing grounds and their impact on price:
