Caviar Brands in Spain: Ranking of the Best with Prices

The caviar market in Spain has changed radically in the last decade. Where before only a few luxury import brands reached a very limited clientele, today there is a wide, diverse, and accessible offering for different budgets. The problem is the opposite: with so many options available, how do you choose? Which brands are truly benchmarks and which merely leverage the industry's reputation without offering quality proportionate to the price?

This ranking is compiled by Bacalalo, where we have been working with gourmet seafood products since 1990 in the Mercat del Ninot in Barcelona. We are not neutral in this ranking: we are one of the caviar sellers in Spain and appear on the list. But we have been in the industry for 35 years and know most of these brands firsthand. If we don't recommend a brand, we explain why with arguments, not vagueness.

The evaluation criteria are four: product quality (flavor, texture, freshness on arrival), traceability and transparency of origin, value for money, and accessibility for the buyer in Spain (logistics, language, customer service).

Caviar served elegantly

Before getting into the ranking, it's necessary to clarify what "good" means when we talk about caviar. A high price does not guarantee quality. A French brand does not guarantee quality. The label "Caspian caviar" does not guarantee quality if the cold chain has failed at any point.

Organoleptic quality. Roe that doesn't stick together, that maintains its shape, that has a texture that bursts cleanly in the mouth without being greasy or gummy. Flavor profile consistent with the declared variety, without notes of oxidation or metallic aftertaste indicating deterioration. Clean aftertaste of adequate duration.

Traceability. Complete labeling: species with scientific name, lot number, production date, origin facility, preservation method (malossol or salted). Without complete traceability, there is no guarantee that the product is what it claims to be.

Value for money. Premium caviar has a truly high production cost. But there are brands that charge an unjustified premium for their name without the quality in the cup supporting it. In this ranking, we penalize the disproportion between price and delivered quality.

Accessibility in Spain. Includes logistics (shipping time, quality of thermal packaging), availability in Spanish, price in euros without customs surprises, and operational customer service from Spain or in Spanish.

1. Riofrio — The Spanish Organic Caviar

Riofrio (caviarderiofrio.com) deserves the top spot not because it is the "best" caviar in an absolute sense, but because it is the most differentiated and consistent offering in the Spanish market. From Granada, in the waters of the Sierra Nevada, they have been producing the world's first certified organic caviar since 2009. Their Acipenser naccarii sturgeons are raised without antibiotics, without hormones, and with population densities below ecological limits.

The profile of Riofrio caviar is mineral and clean, with notes of hazelnut and an aftertaste that reflects the purity of the mountain water. Less iodized than Caspian, more accessible for uninitiated palates, but with enough complexity to be interesting for experts. Its greatest weakness is availability: production is limited, and there are periods when stock is depleted.

2. Lemberg Kaviar — The German benchmark importer in Europe

Lemberg Kaviar is a German company specializing in caviar that has gained a significant presence in the Spanish online market. Their proposal is that of an expert distributor with access to multiple origins: Iranian, Chinese, Italian, French. This variety of origins is their main strength: it allows the buyer to compare profiles within the same store.

Lemberg's quality is consistent and documented. It's not the supplier that will surprise you with the best Beluga you've ever tasted, but it also won't disappoint you. It's a solid, predictable brand in a good way, with professional packaging and proven European logistics. Its main limitation for buyers in Spain is the distance: they ship from Germany, which adds transit time and risk for a product so sensitive to temperature.

3. Petrossian — The historic French brand

Petrossian is perhaps the most globally recognized name in the caviar industry. Founded in Paris in 1920 by two Armenian brothers who fled the Bolshevik revolution, Petrossian was for decades the gateway for Caspian caviar to the Western market. Their store on Boulevard de La Tour-Maubourg in Paris is a pilgrimage site for caviar lovers.

Premium seafood products

In Spain, Petrossian does not have its own physical store, but its product is available at some luxury distributors and on its online store with shipping to Europe. The quality is high and consistent, backed by decades of reputation. The problem with Petrossian for the Spanish buyer is the price: the brand charges a significant image premium. For the same price as a Petrossian Osetra, you can buy an Iranian Osetra of equivalent or superior organoleptic quality.

Petrossian is the right choice when the name on the tin has its own value: a gift to someone who knows the brand, a presentation in a context where "Petrossian" communicates before it is even opened. If the criterion is exclusively the experience on the palate per euro, it is not the most efficient option.

4. Kaviari — The modern and accessible French brand

Kaviari is a Parisian company founded in 1972, with a somewhat more modern and accessible positioning than Petrossian, although in the same premium space. They mainly work with Kristal caviar, which is their own brand for selected Chinese origin caviars with European criteria, in addition to caviars of Iranian and other origins.

Kaviari's proposal is interesting because they have achieved a consistent and quality product profile with caviars of Chinese origin at more accessible prices than the classic Caspian references. Their Kristal Osetra caviar, which comes from selected Chinese fish farms, offers a real quality experience at prices 30% to 40% lower than equivalent Iranian caviars.

For the buyer in Spain who wants to start with premium caviar without the maximum investment, Kaviari is a reasonable entry point. For those who already know caviar and are looking for the maximum organoleptic expression, the Iranian Caspian profile is still a step above.

Kaviari has a presence in several high-end restaurants in Spain that use it for its value for money and consistency of supply.

5. Bacalalo — Specialist in Iranian Caspian Caviar from Barcelona

We are Bacalalo, and it's not false modesty to place ourselves fifth in this ranking: it's because the previous four deserve their positions for specific reasons. Our strength is not that of a luxury brand with a century of history or local organic production. Our strength is specialization and proximity.

Since 1990 in the Mercat del Ninot in Barcelona, we have specialized in the best seafood products. For caviar, our decision was to specialize exclusively in Iranian Caspian Sea caviar because, after decades of knowing the product, it is the origin that offers the greatest organoleptic complexity in the Beluga, Osetra, and Sevruga varieties.

The Imperial Iranian Beluga Caviar we offer has roe between 3.5 and 4mm, the size that characterizes genuine Beluga, with that buttery, nutty, and sea profile that only the Huso huso sturgeon from the Caspian develops with such depth. The Imperial Iranian Osetra Caviar is our most demanded product: notes of hazelnut and sea, long aftertaste, value for money that no French brand can match at equivalent quality.

6. Other brands: Nacarii, Caviar del Ebro, Agrofresc

The Spanish artisanal caviar market is growing. In addition to Riofrio, other Spanish producers have appeared that deserve mention, although they do not yet have the solidity or distribution of the previous ones.

Nacarii. Spanish caviar producer based in Extremadura, with Acipenser naccarii sturgeons raised in the waters of the Tagus river. Very artisanal and low-volume production. The quality is interesting, though inconsistent depending on the batch, and distribution is very limited. A name to follow in the coming years if they consolidate the process.

Caviar del Ebro. Production initiatives in the Ebro river area, mainly in Aragon. The Ebro has interesting water characteristics for sturgeon farming, and some small producers are developing promising products. However, still without the consistency or certified traceability required by the premium market.

Agrofresc. A Catalan company that distributes caviar of various origins in the high-end catering market in Catalonia. It is not a proprietary production brand but a distributor with discernment. Its presence in the professional restaurant market in Catalonia is notable.

It is also worth mentioning the presence of premium supermarket brands (Marks and Spencer, some gourmet lines of El Corte Inglés) that offer caviar at seemingly more accessible prices, but where the traceability and actual quality of the product rarely justify the purchase for those seeking a genuine gastronomic experience.

How to choose according to your budget and occasion

The practical guide to choosing a caviar brand should not start with price but with the occasion and the profile of the person who will consume it.

First caviar experience (budget 40-70€). Kaviari Kristal Osetra or Lemberg Osetra of selected Chinese origin are good entry points. The quality is real, the price is not intimidating, and it allows one to form an opinion before investing in the highest-end references.

Quality personal gift (budget 70-120€). Riofrio Original for someone with sustainability values or an interest in Spanish products. Bacalalo Imperial Iranian Osetra for someone who values the historical reference of the Caspian. Lemberg Osetra for someone who values a consolidated European brand.

Business gift or top-level gift (budget 120-300€). Petrossian if the name on the tin has its own communicative value for the recipient. Bacalalo Imperial Iranian Beluga if the criterion is maximum organoleptic quality for the budget. Riofrio Selection or Reserve for a differentiated gift with a unique ecological argument.

High-end dinner at home (any budget). Combine two varieties: Sevruga for appetizer (more intense, iodized, perfect for awakening the palate) and Osetra or Beluga as the main course of the tasting. Iranian Beluga is the highest possible expression. If the budget allows, it's worth every euro.

For restaurants and hospitality. The value for money for professional use usually points to Iranian Osetra or Kaviari's Kristal Osetra. Beluga is difficult to justify on the menu except in very high-priced establishments. For use in cooking (sauces, plating) where caviar is not the absolute protagonist, Sevruga offers the best intensity-to-price ratio.

Where to buy caviar in Spain: practical summary

Premium caviar in Spain can be purchased through various channels, each with different advantages and disadvantages.

Physical specialty stores. The best option for those who want real advice, can see the product before buying it, and value a personal relationship with the seller. In Barcelona, Mercat del Ninot and some delis in the Eixample offer caviar. In Madrid, Mercado de la Paz and some stores in Salamanca. Availability can be inconsistent for the most premium varieties.

Online direct sales from the producer. Riofrío (caviarderiofrio.com) is the clearest example: direct sales from the producer with maximum traceability and freshness. Bacalalo (bacalalo.com) is the specialist option with shipping from Barcelona. These are the recommended options for high-value purchases where trust in the origin is a priority.

European online stores with shipping to Spain. Lemberg, Petrossian, Kaviari. Suitable for varieties not available from local suppliers or for buyers who know and prefer those specific brands. Consider the additional transit time from Germany or France, especially in warmer months.

Generalist platforms (Amazon, El Corte Inglés gourmet). Not recommended for premium quality caviar. The cold chain is not guaranteed, traceability is opaque, and the risk of receiving product in suboptimal conditions is high. For a product of this price and delicacy, direct purchase is always preferable.

Frequently asked questions about caviar brands in Spain

Which caviar brand do five-star hotels in Spain give as gifts?
It depends on the hotel and the chef. In high-end Spanish hospitality, Petrossian remains the most common reference in the gift and room service segment. In Michelin-starred restaurants, the selection is more diverse: many Spanish chefs have adopted Riofrío as an argument for proximity and sustainability, and some work directly with Bacalalo for Iranian caviar.

Is Chinese caviar from European brands really good quality?
Yes, if it comes from selected and discerning fish farms. Chinese caviar from Kaviari Kristal or Lemberg of selected Chinese origin is an honest product at a reasonable price. The problem with Chinese caviar of uncertain origin, without a supporting European brand, is that the quality is highly variable and labeling is not always reliable.

Is there illegal imported caviar in Spain?
Wild Caspian caviar has been banned since 2005 by CITES. All caviar legally sold in Spain and the EU is from controlled aquaculture. However, caviar of undeclared origin or with incomplete labeling occasionally circulates, especially in unregulated markets. If the labeling does not specify the species with its scientific name and lot number, it is a red flag.

How much caviar is consumed in Spain per year?
Exact data on caviar consumption in Spain is not public, but the Spanish market is considered medium in the European context: higher than Portugal or the Nordic countries per capita, lower than France, Germany, or the United Kingdom. Consumption is concentrated during Christmas, Valentine's Day, and high-end weddings. Fine dining is the main channel of consumption, followed by online retail sales, which have grown significantly since 2020.

Is canned caviar or glass jar caviar better?
The can is the traditional format and preferred by experts for top-quality caviar. The metal of the can (food-grade tin-plated steel) does not transfer flavors to the caviar and keeps the product in total darkness, which better preserves its quality. The glass jar allows the product to be seen, which has commercial value, but exposure to light can slightly degrade the organoleptic quality over time.

How to know if the caviar I received is in good condition?
Indicators of good condition: separate and shiny eggs, not sticking together. Clean sea smell, without notes of ammonia or rancidity. Texture that bursts cleanly when bitten without being rubbery or mealy. Flavor consistent with the declared variety. Indicators of a problem: crushed or very sticky eggs, acidic or bad fish smell, pasty texture, excessively salty taste that masks everything else.

Can caviar be purchased to take abroad from Spain?
Certified aquaculture caviar (with complete CITES documentation on the label) can be freely transported within the EU and exported with the appropriate documents. For travel outside the EU, check the import regulations of the destination country: some countries have their own restrictions on the import of seafood, regardless of CITES regulations.

What is the difference between Beluga, Osetra, and Sevruga?
These are three distinct sturgeon species with three completely different profiles. Beluga (Huso huso) produces the largest eggs (up to 4mm), the smoothest and creamiest flavor, and the longest aftertaste: it is the ultimate expression of caviar. Osetra (Acipenser gueldenstaedtii) has medium eggs (3-3.5mm), a hazelnut and sea profile, a balance between intensity and subtlety: it is the favorite of many experts and the best entry point to premium caviar. Sevruga (Acipenser stellatus) has the smallest eggs (2mm), the most intense and iodized flavor, the most expressive character: it is the caviar for palates that seek impact rather than finesse.
