If you’ve ever searched for canned crab, come across the word “Chatka” and wondered what exactly it is, you’re not alone. Chatka is probably the most recognized brand of canned crab in the world, and yet the confusion surrounding what it contains, where it comes from, and how it differs from other products labeled as “crab” is immense. This guide clarifies everything.

At Mercat del Ninot, we have been selling premium canned goods for decades, and Chatka is one of the products that generates the most questions. The good news is that, once you understand what you are buying, the decision is simple.

What is Chatka: The Brand and the Product

Chatka is not a type of crab or a variety of seafood. Chatka is a commercial brand, registered by the Russian company that has been marketing canned king crab (Paralithodes camtschaticus) since the mid-20th century. The name comes from “Kamchatka,” the Russian peninsula in the North Pacific where this crab is traditionally caught.

What makes Chatka special is that it works exclusively with Russian king crab, also known as red king crab. It is not surimi, it is not a substitute, it is not river crab or snow crab. It is king crab: the legs and body of the largest and most coveted crustacean on the market, cooked, selected, and canned.

The history of Chatka is linked to the Soviet fishing industry. For decades, Russia was the world's leading supplier of North Pacific king crab, and Chatka became the benchmark brand for export. Today, although geopolitics has complicated supply chains, Chatka remains the quality standard against which all canned crab on the market is measured.

King Crab vs. Surimi: The Difference You Need to Know

This is the most widespread and important confusion to clarify. In the supermarket, two radically different products coexist under similar names:

Canned King Crab (Chatka and similar)

  • What it is: Meat from king crab (Paralithodes camtschaticus or related species), cooked and canned. It is 100% crab, without additives, starches, or added proteins.
  • Ingredients: Crab, water (or light brine). Nothing else.
  • Texture: Long, firm, and juicy meat fibers, which naturally shred into strands when pulled apart with fingers.
  • Flavor: Sweet, delicate, marine, with a subtle complexity reminiscent of lobster but with more presence.
  • Price: High. A 110g can of king crab legs can cost between 15 and 30 euros.

Surimi (crab sticks, "gulas del norte", etc.)

  • What it is: A paste made from fish protein (usually Alaskan pollock or hake), processed and molded to imitate the texture and appearance of crab.
  • Ingredients: Fish protein, starch, sugar, salt, flavorings, colorings (paprika extract, carmine). Does not contain real crab.
  • Texture: Homogeneous, elastic, with artificial fibers that imitate those of crab but with a clearly distinct consistency.
  • Flavor: Mild, generic, with an artificial sweetness and a diffuse marine background.
  • Price: Low. Between 1 and 4 euros per 200-300g package.

The difference between the two products is comparable to that between an Iberian acorn-fed ham and a turkey sausage with ham flavor. They share a concept, but the gastronomic experience is incomparable. Surimi is a perfectly valid processed product for its price category, but it is not crab and should not be confused with it.

Types of Chatka Products

Chatka offers different presentations depending on the part of the crab and the packaging format:

King crab legs (100% legs)

This is the premium product in the range. It contains exclusively meat from king crab legs, which are the largest, juiciest, and most prized pieces. The meat fibers are long, firm, and intensely flavored. It is available in cans ranging from 110g to 400g or more.

Our Chatka king crab legs 110g is the ideal format for an individual experience or for two people as an appetizer. For special occasions or larger groups, the 400g format offers better value for money.

60% legs

A mixture of leg meat (at least 60%) with crab body meat. Leg fibers are longer and firmer; body fibers are shorter and shredded. It is an intermediate option in price and presentation, very suitable for preparations where crab is mixed with other ingredients.

Shredded meat (fancy or regular)

Fragments of body meat and smaller pieces of crab. More shredded texture, equally authentic flavor. It is the most economical option within the king crab range and the most suitable for recipes where the meat is integrated into a preparation (salads, fillings, pastas).

The King Crab: Biology and Origin

The red king crab (Paralithodes camtschaticus) is one of the most impressive crustaceans on the planet. An adult specimen can reach a leg span of up to 1.8 meters and a weight of 10-12 kg. It lives in the cold waters of the North Pacific, mainly in the Bering Sea, the Sea of Okhotsk, and the waters of Alaska and Kamchatka, at depths of 5 to 400 meters.

The main fishing areas are:

  • Russia (Kamchatka and Sea of Okhotsk): historically the largest source of king crab, and the one that supplies Chatka. Fishing quotas are regulated to ensure the sustainability of the resource.
  • Alaska (Bering Sea): the other major producing area. Alaskan king crab is the same as Russian (the species knows no political boundaries) and has the same quality.
  • Norway (Barents Sea): a population introduced in the 1960s from the Pacific that has successfully established itself. Increasingly relevant in the European market.

King crab is caught with pots (traps) during regulated seasons, generally in autumn and winter, when sea conditions and the biological state of the crab are optimal. Only males exceeding a minimum size are caught, leaving females and young specimens to ensure population regeneration.

Canned King Crab vs. Fresh Crab

The logical question is: isn't fresh crab better? The answer has nuances:

  • Flavor: Freshly cooked crab has a slightly livelier flavor and a juicier texture. Canned crab loses a touch of freshness but retains all the complexity of the flavor.
  • Availability: Fresh king crab is practically impossible to find in Spain except in high-end restaurants. Canned crab allows access to the product anytime, anywhere.
  • Price: Fresh king crab can exceed 100 euros per kilo. Canned crab, with prices between 80 and 150 euros per kilo of drained product, is more affordable without sacrificing the essence of the product.
  • Convenience: Canned crab is ready to eat. It requires no cooking, cleaning, or handling. You open the can and eat.
  • Shelf life: Fresh crab lasts 1-2 days. Canned crab lasts 3-5 years.

In practice, for the vast majority of domestic uses and for many uses in hospitality, quality canned king crab offers an excellent result with much more practicality than the fresh product.

How to Use Chatka in the Kitchen

Canned king crab is a luxury ingredient that deserves to be highlighted. These are the most common and best-performing uses:

Directly from the can

The purest way to enjoy it. Open the can, lightly drain the liquid, and serve the meat at room temperature with a few drops of lemon and homemade mayonnaise on the side. The quality of the product speaks for itself. It is a luxury appetizer that is prepared in 30 seconds.

Crab salad

Shredded crab meat, diced ripe avocado, finely chopped spring onion, a hint of lime, fresh cilantro (optional), and light mayonnaise or citrus vinaigrette. Served in individual glasses or on rye bread toasts, it is an elegant starter for any occasion.

Crab tartare

Crab meat chopped into irregular pieces (not mashed), seasoned with sesame oil, a touch of soy, grated ginger, and chives. Assembled in a cylindrical mold on a base of mashed avocado. It is a restaurant-style presentation that is easily executed at home with a plating ring.

Pasta with crab

Linguine or spaghetti with crab meat briefly sautéed in butter, sliced garlic, chili, and a generous splash of white wine. Finish with fresh parsley and lemon zest. The key is to add the crab at the end, just enough to warm it, without overcooking it.

Crab croquettes

A classic that works extraordinarily well with king crab. Light béchamel with shredded crab meat, a touch of "pimentón de la Vera" (Spanish paprika) and chives. Bread with panko for an extra crunch. The flavor of king crab elevates simple croquettes to gourmet status.

Canapés and toasts

Toasted crystal bread, a cream cheese base with lemon, king crab meat on top, and some trout roe or a drizzle of truffle oil. A visually and gustatorily impactful canapé.

Storage and Handling

  • Unopened: The Chatka can can be stored at room temperature in a cool, dry place for years (check the manufacturer's expiration date). It does not need refrigeration before opening.
  • Once opened: Transfer the contents to a glass container, cover it, and consume it within a maximum of 2-3 days, always refrigerated. Opened crab deteriorates quickly.
  • Serving temperature: For direct consumption, remove the meat from the refrigerator 10 minutes before serving. At room temperature, the flavor is perceived more fully.

Chatka in the Context of Gourmet Canned Goods

Within the universe of gourmet canned goods, king crab occupies a unique place. It is, along with caviar and certain premium anchovies, one of the highest-priced canned goods on the market, and one of those that most justifies that price due to the intrinsic quality of the product.

If you are putting together a selection of premium canned goods for a special occasion, Chatka king crab is the crown jewel: the one that elevates the entire spread. Combine it with good Cantabrian anchovies, natural cockles, northern tuna, and smoked sardines, and you have a complete gastronomic experience without turning on a stove.

Frequently Asked Questions

Is Chatka real crab?

Yes, 100%. Chatka exclusively contains king crab (Paralithodes camtschaticus) meat, without additives, starches, or added proteins. It is not surimi or a substitute. The ingredients are crab and brine, nothing else.

Why is Chatka crab so expensive?

It is caught in remote North Pacific waters under extreme conditions, quotas are limited for sustainability, the meat yield per specimen is low, and processing is manual. Global demand is growing while supply is regulated.

How long does an opened can of Chatka last?

Once opened, it should be consumed within 2-3 days, refrigerated in a covered glass container. Canned crab deteriorates quickly when exposed to air. It does not last as long as anchovies or sardines.

Can Chatka crab be frozen?

It is not recommended. Freezing alters the meat fibers, and upon thawing, the texture becomes watery and mealy. An unopened can lasts for years at room temperature, so there is no need to freeze it.

What is the difference between 110g and 400g Chatka?

Both contain the same product: king crab legs. The 110g is ideal for 1-2 people as an appetizer. The 400g offers a better price per gram and is the option for groups, celebrations, or recipes requiring more quantity.

Is Chatka crab sustainable?

The fishery is regulated with annual quotas. Only adult males of minimum size are caught during short, controlled seasons. The introduction into the Barents Sea (Norway) reduces pressure on Pacific populations.

Is Chatka suitable for sushi?

Yes, it is excellent for California rolls, temaki, and nigiri. Unlike the surimi commonly found in supermarket sushi, real crab provides genuine flavor and authentic texture that transform the dish.

Can I give Chatka crab to a child?

It is safe if there is no crustacean allergy. It is rich in protein, low in fat, with zinc, selenium, and B12. Crustacean allergy is common, so if the child has not tried crustaceans, introduce it in a small amount and consult a pediatrician if there is a history.
