Marinated Anchovies: Authentic Cadiz Recipe

What is Cadiz marinated anchovy

Marinated anchovy (or dogfish) is one of the most iconic pintxos in southern Spain, especially Cadiz. It consists of cleaned anchovies marinated for several hours in a vinegar and spice mixture (cumin, paprika, oregano, garlic) and then fried with a touch of flour.

The result is an anchovy with a deep, spicy flavor, tender texture inside and crispy outside. It is radically different from anchovies in vinegar (raw) and simple Andalusian fried anchovies (without marinade).

Ingredients for 4 people

For the marinade:

  • 500 g cleaned anchovies, anisakis-free (size 1)
  • 200 ml Sherry vinegar
  • 400 ml cold water
  • 1 tablespoon ground cumin
  • 1 tablespoon sweet paprika (or half smoked)
  • 1 teaspoon dried oregano
  • 3 cloves finely chopped garlic
  • Salt, ground black pepper
  • 1 bay leaf (optional)

To fry:

  • 150 g fish flour
  • 700 ml mild olive oil or sunflower oil

Step-by-step recipe

  1. Prepare the marinade: mix vinegar + water + spices + garlic in a bowl. Taste for salt.
  2. Marinate anchovies in the marinade for 2 to 12 hours in the refrigerator. If you're in a hurry, 2 hours is enough; 4-6 hours is better.
  3. Heat oil to 175°C (slightly less than classic frying so the cumin doesn't burn).
  4. Drain the anchovies well from the marinade. Important: do not leave them wet.
  5. Lightly flour in a bag with flour + shake off excess.
  6. Fry 1-1.5 minutes per side in small batches until golden.
  7. Drain on paper and serve hot with lemon.

Variations

Marinated dogfish (Cadiz classic): same recipe but with strips of dogfish instead of anchovies. Longer marinating times (6-12 h) because it's a larger fish.

Bienmesabe (Malaga): Malaga version with more oregano and less cumin. The name comes from "how good it tastes to me."

Baked marinade (oven-baked): marinated, lightly floured, 12 min at 200°C. For a light option.

How to serve and pair

Serve very hot, freshly fried, with a lemon wedge and, optionally, an aioli sauce on the side. In Cadiz, they are accompanied by thin fried potatoes (chips) or roasted pepper salad.

Pairing: Cold Manzanilla from Sanlúcar de Barrameda (very cold), Fino de Jerez, or very cold Cruzcampo beer. NOT red wines: it clashes with the marinade.

Frequently asked questions

How does marinade differ from vinaigrette?
The marinade contains spices (cumin, paprika, oregano) in addition to vinegar. Marinated anchovies ARE FRIED after marinating; anchovies in vinegar are eaten raw after marinating. These are two distinct preparations that share a base ingredient.
How long should anchovies marinate?
2 hours minimum in the refrigerator, 12 hours maximum. Any longer and the meat becomes too soft, and the final frying won't be crispy. The ideal vinegar:water ratio is 1:2 in the Cadiz marinade (milder than classic vinaigrette).
What spices are exactly in Cadiz marinade?
Ground cumin (main), sweet paprika (sometimes smoked), dried oregano, chopped garlic, salt, pepper, and Sherry vinegar. Some families add bay leaves or a cayenne pepper.
Can they be baked or air-fried instead of fried?
Yes, but they lose their "Cadiz" character. Baked: 200°C, 12 min, with a light flour crust. Air-fried: 180°C, 8 min. They are tasty but not the same as traditional frying in a Cadiz bar.
Cadiz vs Malaga marinated anchovies?
Cadiz: more cumin, Sherry vinegar, sweet paprika. Deeper, more "Moorish" flavor. Malaga: less cumin, white wine vinegar, sometimes just lemon. Fresher and less spicy.
How long do raw marinated anchovies last?
Marinated unfried: 24-48 hours maximum in the refrigerator. After that, they lose texture. Once fried: eat on the same day (fresh) or store for 2-3 days in the refrigerator and reheat for 3 min in the oven before serving.
How to prevent the marinade from burning when frying?
Shake off excess liquid before flouring. Cumin and paprika burn easily at high temperatures. Keep the oil at 175°C (not 180°C like classic frying) and fry for less time (1 min per side).
