We only work with Cantabrian anchovies from peak season (April-June), when the fish reach their optimal fat content and flavor. Each piece is hand-selected by size to guarantee thick, meaty fillets.

Slow healing of 6 to 12 months

The anchovies are cured in salt barrels for a minimum of 6 months. No rush, no shortcuts. It is time that transforms a simple whitebait into a smooth, balanced anchovy with that unmistakable umami flavor.

Cleaning and filleting 100% by hand

Each anchovy is individually deboned, skinned, and filleted by hand. It's a delicate process that no machine can replicate: it requires a delicate touch, experience, and respect for the product.

Extra virgin olive oil and nothing else

Our anchovies are marinated in extra virgin olive oil. No preservatives, no colorings, no flavor enhancers. Just anchovies, salt, and olive oil. Fine ingredients for a fine product.

The anchovies arrive in their original packaging (can, sachet, or glass jar, depending on the format), inside protective packaging. They are labeled with weight, batch number, best before date, and origin.
