Lemon Anchovies: Refreshing Recipe Without Vinegar

Why lemon instead of vinegar

Lemon anchovies are an Andalusian variation that totally or partially replaces vinegar with fresh lemon juice. The result is an anchovy that is smoother on the palate, with a citrus aroma, less pungent in the stomach, and pairs better with young white wines and pilsner beers.

The science is simple: vinegar has 6-7° of acetic acid, which penetrates quickly and leaves a long finish. Lemon provides citric acid (≈5-6%), which is milder and more aromatic. The anchovy "blanches" the same way but is less aggressive.

This version is very typical in Malaga city, the Costa del Sol, and tourist areas in the south. In the north (Cantabria, Asturias), it's rare: they prefer classic vinegar.

Anisakis: freezing is just as mandatory

Lemon does not inactivate anisakis. Any preparation of raw or marinated oily fish requires prior freezing at -20°C for a minimum of 24 hours (AESAN). In a domestic freezer, 48-72 hours is better.

If you buy already treated frozen anchovies, simply defrost them for 6 hours in the refrigerator before starting.

Ingredients (4 people)

  • 500 g fresh anchovies (size 0 or 1) or anisakis-treated frozen
  • 200 ml fresh lemon juice (≈ 4-5 medium lemons)
  • 100 ml cold water
  • 1 teaspoon fine salt
  • 1 bay leaf (optional, adds depth)
  • 150 ml mild arbequina EVOO
  • 2 cloves minced garlic
  • Plenty of fresh parsley
  • Zest of half a lemon at the end (optional)

Step-by-step recipe

  1. Freeze for 48-72 h at -20°C. Defrost for 6 h in the refrigerator.
  2. Clean: remove head by pulling, open along the belly, remove central spine by pulling towards the tail. They will be butterflied.
  3. Wash and dry thoroughly. This is CRITICAL with lemon: if they remain wet, the lemon is diluted and the result is bland.
  4. Marinate for 4 hours in the refrigerator. Cover fillets with a mixture of lemon+water+salt+bay leaf. NO more than 5 h: lemon is acidic enough, and after that, they soften.
  5. Drain and dress: drain well on paper, place in a jar, cover with EVOO, garlic, parsley. Lemon zest is optional at the end if you want more citrus intensity.
  6. Rest for a minimum of 1 hour before serving. Better overnight.

Regional variations of lemon anchovies

Malaga city style: only lemon (no water), with Hojiblanca EVOO and plenty of garlic.

Costa del Sol style: lemon + chopped red onion at the end.

Cadiz version: half sherry vinegar, half lemon. More intense.

Modern version (chef): marinate with lemon + a touch of fresh mint at the end. Refreshing for summer.

How to serve and what to pair with

Serve very cold, on a flat plate, without piling them up. With an extra drizzle of the preserving oil.

Classic Malaga accompaniments: cold boiled potato with spring onion, tomato toast, marinated olives with oregano, Russian salad.

Wine pairing: young Rueda Verdejo (perfect), Albariño Rías Baixas, chilled Manzanilla de Sanlúcar. NO reds.

Beer: Estrella Galicia, Pilsen Urquell, very cold Heineken. NO IPAs or beers with dominant hops.

Frequently asked questions

Why use lemon instead of vinegar?
Lemon provides a milder acidity (citric acid) than vinegar (acetic acid). The anchovy "blanches" the same way but is less pungent and has a citrus aroma that pairs better with mild beers and young white wines. It's the version most commonly seen in Malaga city and the Costa del Sol.
Do they also need to be frozen?
Yes. AESAN regulations on anisakis apply equally: 24-72h at -20°C before marinating. Lemon does not kill the parasite, nor does vinegar. Only freezing or cooking ≥60°C are effective.
How long do they marinate with lemon?
4-5 hours maximum in the refrigerator. Lemon is milder than vinegar, but any longer and they become rubbery. You'll know they're ready when they are white and firm to the touch.
Does any lemon work?
Mediterranean lemons (Sorrento, Verna or Andalusian lemon) for the best aroma. Avoid very acidic South American lemons (juicier but flatter in flavor). If you have them, mix with Meyer lemons for a sweet-floral note.
Lemon anchovies vs Peruvian ceviche?
Different. Peruvian ceviche uses very fresh fish marinated for 15-30 min in lime/lemon and served immediately. Lemon anchovies marinate for 4 hours, are drained, and covered with EVOO. Ceviche is a dish, anchovies are a preserve/tapa.
Can I add vinegar + lemon at the same time?
Yes, a 70% vinegar / 30% lemon juice mixture gives an intermediate point. Many Andalusian families do it this way. But the result loses the "clean" character of pure lemon.
How long do they last after dressing?
In the refrigerator covered with EVOO: 7-10 days. Less than pure vinegar ones (lemon oxidizes faster), but longer than it will take you to eat them.
What tapas do they work especially well for?
Toast with raf tomato, bread with oil and Maldon salt, on top of chickpea hummus, on cold boiled potato with spring onion. Their freshness calls for summery appetizers without being too heavy.

To finish

Lemon anchovies are the "summer" version of the classic. Fresher, less aggressive, perfect for a terrace with cold white wine. If you've never tried them, it's worth doing so once to compare them with traditional vinegar ones.
