- Battered cod: the cod is coated in flour AND then in beaten egg (or tempura/beer batter). The layer is thicker, fluffier, and golden. It is heartier and protects the cod meat more.
Both are excellent, but fried cod with only flour is quicker, lighter, and easier to prepare. It is the option we recommend for everyday meals.
Which cut to use for fried cod
Fried cod allows for a greater variety of cuts than grilled or baked cod:
- Loin cut into 3-4 cm pieces: the premium option. Juicy inside with a thin crispy crust.
- Penca (belly) cut into pieces: ideal for tapas. The bone adds extra flavor and is easily removed when eating.
- Tail: thinner pieces fry quickly and are very crispy. Perfect for bar servings.
- Shredded cod: for fritters and tortillitas (technically another preparation, but with the same frying base).

Step-by-step for fried cod
1. Dry the cod (essential)
Dry each piece of cod with kitchen paper on all sides. Repeat if necessary. This step is absolutely critical: surface moisture prevents the flour from adhering well and causes dangerous oil splatters. Well-dried cod is cod that fries well.
2. Flour
Place the flour on a plate or tray. Coat each piece of cod in the flour, covering all sides. Shake off any excess. The flour layer should be thin and even: we don't want clumps or piles of flour that will then remain raw in the oil.
3. Heat the oil to 180 °C
Pour plenty of oil into a deep pan or fryer. Heat to 180 °C (use a thermometer). To check without a thermometer: drop a small piece of bread; if it bubbles immediately and rises to the surface in 2-3 seconds, it's ready.
4. Fry in batches of 3-4 pieces (3-5 minutes)
Carefully add the cod pieces, placing them away from you to avoid splatters. Fry in small batches (3-4 pieces maximum). If you add too many, the oil temperature will drop and the cod will absorb fat instead of frying properly.
Fry for 3-4 minutes for 2-3 cm pieces or 4-5 minutes for thicker pieces. Flip halfway through if the pieces are not completely submerged. The cod is ready when the flour has a uniform, crispy golden color.
5. Drain and serve
Remove the pieces with a slotted spoon and place them on a wire rack (better than kitchen paper, which retains moisture and softens the crust). Serve immediately with half a lemon on the side.
Tips for perfect frying
- Exact 180 °C: too cold (160 °C) = cod absorbs oil like a sponge. Too hot (200 °C) = flour burns before the cod cooks through.
- Fine, not coarse flour: use regular wheat flour (not strong flour or whole wheat). Fine flour creates a more delicate and crispy layer.
- Flour just before frying: if you flour and let it sit, the cod's moisture wets the flour and forms a sticky paste. Flour and immediately put in the oil.
- Do not cover the pan: covering traps steam and turns frying into boiling. The cod becomes rubbery.
- Drain on a rack: kitchen paper absorbs oil but also retains moisture. The rack allows air to circulate and the crust to stay crispy.
- Serve immediately: fried cod quickly loses its crispiness. Every minute it spends out of the oil, the crust absorbs moisture from the inside and softens.
Which oil to use for frying cod
- Mild olive oil (0.4°): our recommendation. Neutral flavor, good smoke point (210 °C), and more stable than sunflower. This is what we use at Mercat del Ninot.
- High oleic sunflower oil: a correct alternative. High smoke point (230 °C) and neutral flavor. More economical than olive oil.
- Extra virgin olive oil: works but has an intense flavor that can mask the cod, and a lower smoke point (170-180 °C). Better to reserve it for dressing raw.

Fried cod with chickpea flour
Substitute wheat flour with chickpea flour. The crust is slightly crispier and has a legume flavor that pairs very well with cod. Plus, it's suitable for celiacs.
Fried cod with paprika
Mix the flour with a teaspoon of sweet paprika from La Vera. The cod acquires a reddish-orange color and a subtle smoky flavor reminiscent of Extremaduran cuisine.
