Why Cantabrian anchovy works in sushi

Although traditional Japanese cuisine uses local fresh anchovy (Engraulis japonicus or Trichiurus japonicus), cured Cantabrian anchovy has been appearing on Spanish-Japanese fusion menus for years. Technical reasons:

  • 12-month curing generates free glutamate that ENHANCES the flavor of Japanese rice (which traditionally lacks concentrated umami)
  • Silky texture of Cantabrian anchovy is perfect for nigiri
  • The saltiness of the anchovy eliminates the need to add soy sauce to the bite
  • Umami combination Spain (anchovy) + Japan (seaweed, soy) = gastronomic synergy

Nigiri with Cantabrian anchovy

Recipe (10 pieces):

  • 200g cooked and seasoned sushi rice (rice vinegar + sugar + salt)
  • 10 Cantabrian anchovy fillets caliber 00
  • Wasabi paste
  • Japanese soy sauce for dipping (optional, anchovy is already salty)

Assembly: form small rice balls (15g each), put a pinch of wasabi on top, place an anchovy fillet over the wasabi. Serve immediately. Maximum 1 hour in advance.

"Philadelphia" uramaki with anchovy

Recipe (1 roll, 8 pieces): sushi rice spread over nori seaweed (with the rice facing outwards, uramaki style). In the center: cream cheese (Philadelphia roll style) + avocado strip + 2-3 chopped Cantabrian anchovy fillets. Roll with a makisu mat, cut into 8 pieces. Serve with soy sauce and wasabi on the side.

Mediterranean poké bowl with anchovy

Composition for 1 person:

  • 200g cooked sushi rice (base)
  • 80g diced avocado
  • 50g diced cucumber
  • 50g cooked edamame
  • 30g halved cherry tomatoes
  • 3-4 chopped Cantabrian anchovy fillets
  • 1 tbsp soy sauce
  • 1 tsp lemon juice
  • 1 tsp toasted black sesame seeds
  • Chopped fresh chives

"Mediterranean" version: replace soy sauce with Arbequina EVOO, edamame with cooked chickpeas, sesame with chopped Marcona almonds. The poké bowl gains Spanish flavor.

Frequently asked questions

Can Cantabrian anchovy be used for raw sushi?
Yes, it is completely safe. The 12-month curing + salting process eliminates anisakis and any pathogens. It can be consumed raw in any preparation, including sushi. It is NOT necessary to freeze it beforehand.
Does it replace fresh Japanese anchovy?
It is not 100% interchangeable. Fresh Japanese anchovy: more subtle flavor, rawer texture. Cured Cantabrian anchovy: concentrated umami, silky texture. For purist traditional sushi: Japanese anchovy. For fusion: Cantabrian anchovy (adds Spanish character).
Caliber 0 or 00 for sushi?
Caliber 00 is ideal — larger fillets (8-10 cm) better cover the nigiri rice. Caliber 0 also works but requires 2 fillets per piece. Caliber 1 is too small for nigiri but valid for poké bowls.
Does sushi with anchovy include soy sauce?
Better without. Cantabrian anchovy already has 5-7% salt — adding Japanese soy sauce (5-6% salt) will oversaturate. If you insist on soy sauce: use a low-salt version or add only a minimal drop.
How much does it cost to make anchovy sushi for 4 people?
~25-35€ total: 1 can of Cantabrian anchovies caliber 00 (12-15€), 300g sushi rice (3€), 1 sheet nori (1€), avocado (2€), cucumber (1€), cherry tomatoes (2€), soy sauce (2€), wasabi (3€). In an equivalent Japanese restaurant: 60-100€ for 4 people.
Learning to make sushi at home?
Possible with practice. Materials: makisu mat (5€), sharp knife, quality Japanese rice (5€/kg), rice vinegar (3€), nori (5€). First month: nigiri (easy) and uramaki (medium). Sashimi and advanced techniques: 3-6 months of practice.
