Mojama + Marcona Almond + Cured Cheese: The Perfect Appetizer in 5 Minutes

  • 80g Barbate mojama (loin, NOT shredded) — 8-12€
  • 100g toasted Marcona almonds with salt (premium) — 8-10€
  • 200g aged Manchego cheese 12+ months in 1.5cm³ cubes — 10-15€
  • 1 bottle arbequina extra virgin olive oil — optional 1€/use
  • 1 wooden or rustic slate plate
  • 1 microplane or fine grater

The assembly (5 minutes)

  1. Arrange cheese cubes in the center of the plate.
  2. Distribute Marcona almonds around.
  3. Grate mojama with a microplane over the cheese (5-7g per person = 1 generous teaspoon per cube).
  4. Drizzle arbequina EVOO lightly over the entire dish.
  5. Serve immediately with toothpicks.

Three assembly options:

  • "Easy tapas" assembly: cheese cube + 2-3 almonds + mojama shaving. Eat as a pintxo.
  • "Shared plate" assembly: cheese in the center, almonds around, generous grated mojama, EVOO.
  • "Individual" assembly: mini-spoon or toothpick with cheese + almond + mojama. For an elegant event.

Variations and improvements

Basque version: replace Manchego with aged Basque Idiazábal. More intense, more rustic.

With honey version: 1 teaspoon rosemary honey over each cheese cube before mojama. Sweet-salty balance.

Premium version: add a cube of natural quince paste alongside the other ingredients. Sweetness that enhances the contrast.

Vegetable version: replace mojama with finely chopped sun-dried tomato. Loses the marine umami but gains Mediterranean freshness.

Modern version: add a cut raspberry or strawberry on the side. Fresh touch that contrasts with the salinity.

Frequently asked questions

Mojama or bottarga?
Barbate mojama is the classic Spanish one. Bottarga di muggine (Sardinian) is the Italian version. Both work in this appetizer. Mojama is more affordable (80-130 €/kg vs bottarga 150-300 €/kg). For this recipe: Barbate mojama.
Why Marcona almonds?
Marcona (Prunus dulcis var. Marcona) is a superior quality Spanish almond variety: rounder, sweeter, creamier than the common one (Largueta). Toasted with salt provides the perfect contrast. If you don't have Marcona: toast common Spanish almonds with Maldon salt.
Better aged or semi-aged cheese?
Aged 12-18 months for maximum umami and firmness. Semi-aged (3-6 months) is milder, less flavor: the contrast with mojama is less pronounced. For this recipe: ALWAYS aged.
How much mojama per person?
5-7g grated = 1 generous teaspoon. More can be overwhelming (mojama is very intense). 4 people: 25-30g total = slices from a small piece.
Microplane or normal grater?
Microplane ALWAYS. It produces finer shavings that distribute the flavor better. A normal grater yields thick pieces that are too heavy. An 8-12€ investment in a microplane that lasts for years.
Pairing?
Classic Yzaguirre red vermouth (perfect). Cold young Basque Txakoli. Dry Manzanilla from Sanlúcar. Albariño white wine. Brut nature cava. NOT powerful red wines.
