How to Tell if Smoked Salmon is Truly Premium

In short: Premium smoked salmon is distinguished by: specific origin (Scotland, Norway, Ireland, not generic EU), natural COLD smoking with real wood (beech, oak), no E-160 colorants, uniform slices 3-4mm thick, natural reddish-orange color, delicate taste not too salty.

The 7 criteria of premium smoked salmon

1. Declared specific origin: "Scotland", "Norway", "Ireland", "Tasmania" (not generic EU or no origin).

2. Natural COLD smoking: 25-30°C with beech, oak or alder wood. NOT hot smoked (more cooked, distinct profile).

3. No colorants: premium salmon has a natural reddish-orange color due to its natural diet. If it contains E-160 (colorant), it is a sign of pale, artificially colored intensive farmed salmon.

4. No E-202, E-211 preservatives: premium smoked salmon is preserved by its salinity + smoking, not by chemical additives.

5. Uniform slices 3-4mm thick: cut with a sharp professional knife. Uneven slices = cheap industrial cut.

6. Reasonable amount of salt: premium has 2-3% added salt. Mediocre industrial has 4-6% (stronger flavor to mask inferior quality).

7. Flavorless oil: if extra oil is used, it must be olive oil or flavorless. Sunflower/vegetable oil is a sign of a basic product.

The color: the first sign of quality

Premium smoked salmon has a natural, NON-uniform reddish-orange color. Slightly variable tones between slices = wild fish or quality farming.

VERY uniform red-orange color = added colorant (E-160 canthaxanthin). More intensely reddish than real fresh salmon.

Pale pink color = low-quality intensive farmed salmon (no colorant but no natural pigmentation due to poor diet).

Texture and flavor: the real test

Premium texture: silky, "melt in your mouth," integrated fats that are not liquid. Slices remain intact when lifted with a fork.

Mediocre texture: rubbery or too soft. Separated fats (yellowish spots). Slices break when handled.

Premium flavor: subtle balance of salt + smoke. The fresh salmon flavor predominates, with smoking complementing it. Sweet-marine finish.

Mediocre flavor: too salty to cover up inferior quality. Dominant smoke, taste of "liquid smoke" instead of real wood.

Not always. Scotland has a tradition of natural smoking (beech, oak) and premium wild Atlantic salmon. But Norway also produces quality smoked salmon (especially from fjords, not massive farms). The important thing: specific brand + detailed origin, not just country.
Wild vs. farmed smoked salmon?
Wild: better omega-3 profile, natural color, less fat, more exclusive. Well-farmed (Norwegian fjord, organic Scottish salmon): very good. Industrial mass farming: avoid. "Wild" in premium cans can cost 3-5x more than equivalent farmed.
How long does opened smoked salmon last?
Refrigerated 2-4°C wrapped in plastic wrap: 5-7 days. Unopened vacuum-sealed: until expiration date (typically 3-4 weeks after packaging). Once opened, DO NOT freeze (texture is damaged upon thawing).
Does Mercadona sell decent smoked salmon?
Mercadona Hacendado basic (€20-25/kg) is standard industrial. Mercadona Hacendado premium "Calidad Mercadona" (€30-40/kg) is decent. The "Origen Noruega" line is usually correct. For real premium: look beyond supermarkets.
How to store opened smoked salmon?
Wrap remaining slices in parchment paper + zip-lock bag or film with little air. Refrigerate at 2-4°C. Consume within 5-7 days. NOT in the original opened packaging (light oxidizes faster).
Is it better to slice it very thinly or thicker?
Premium: 3-4mm is optimal. Too thin: texture is lost, flavor is more uniform. Too thick (>5mm): tastes like "salmon meat" instead of delicate smoke. If you buy a whole piece (not pre-sliced), use a very sharp knife at a 30° angle.
