Huevas de Salmón: la Alternativa Económica al Caviar

Salmon Roe: The Affordable Caviar Alternative

May 26, 2026Lalo González Rodríguez⏱ 3 min de lectura

In short: Salmon roe (ikura in Japanese) is a true alternative to caviar: similar "pop" texture, oceanic flavor, 10x lower price (€8-25/100g vs €80-300/30g for caviar). Versatile use in sushi, salads, blinis. NOT caviar, but an authentic gourmet product in its own right.

What exactly is salmon roe?

Salmon roe are the unfertilized eggs of female salmon (Salmo salar or Oncorhynchus spp.), processed through light salting and preserved in their own brine or mild oil.

In Japanese, they are called ikura (イクラ) and are one of the classic sushi toppings. In the West, they are known as "red caviar" — a commercial name, NOT legal: according to European regulations, only sturgeon roe can legally be called "caviar".

Color: intense orange-red. Size: 5-8mm in diameter (much larger than real caviar roe, which is 2-4mm).

Frequently asked questions

Is salmon roe caviar?
Legally NO. According to European regulations, "caviar" is exclusively reserved for sturgeon roe. Salmon roe is referred to as "roe" or commercially as "red caviar" (a gray area designation). It is an authentic gourmet product in its own right, not a substitute.
Which is better: salmon roe or caviar?
A matter of taste. Salmon roe: sweeter-marine flavor, more "explosive" texture, more vibrant color. Osetra caviar: more complex, buttery flavor, more delicate texture. For sushi: salmon roe. For an elegant appetizer: both are valid.
How long does opened salmon roe last?
Refrigerated 2-4°C in its own juice, airtight jar: 5-7 days. DO NOT freeze (texture will be damaged). If the juice dries out: add mild EVOO to keep the roe hydrated.
Real roe vs dyed lumpfish roe (Mercadona)?
Real salmon roe: natural orange color, fish flavor, price €15-25/100g. Dyed lumpfish roe (typical Mercadona): artificial black or orange color, more industrial flavor, €5-8/can. Different product. Dyed roe is a caviar substitute, NOT premium roe.
How to identify quality roe?
Natural bright orange color (not overly red from dye). Intact roe (not broken in the container). Clear brine (not cloudy). Sweet-buttery sea flavor (not too salty or chemical). Label: "salmon roe [origin]" without "substitute" or E-160.
Pairing with salmon roe?
Brut nature Champagne, brut Cava. Ice-cold vodka (Russian-Japanese style). Chilled premium sake (for Japanese dishes). Young white wine (Albariño, Sauvignon Blanc). NO red wines.

In conclusion

Salmon roe is one of the most cost-effective gourmet products: 90% of the visual and flavor impact of premium caviar at 10% of the price. For starting with gourmet appetizers or for daily sushi service, they are an intelligent investment. Premium Norwegian salmon roe at Bacalalo is a real product (not a lumpfish substitute), with sashimi-grade quality adaptable to sushi, blinis, and appetizers.
