- Salting in a light brine (3-5% salt) or dry salt.

- Translucency. Good roe is translucent (light passes through when held up). Industrial roe is opaque, almost matte.
- Integrity of the sphere. Each sphere should be whole and round. If many are broken or there's loose liquid in the jar, it's poor quality.
- Uniform size. Consistent size indicates manual selection. Mixed sizes = bulk product.
- Natural color. Vibrant natural orange. Be wary of electric red tones — they may contain coloring agent E-160c or similar.
- Ingredient list. It should only state: salmon roe, salt, water. If preservatives (E-211, E-202), polyphosphates, or glutamate are added, it's industrial.

- Freezing: NOT recommended. Upon thawing, the spheres burst, lose texture, and the liquid is released.
