Four non-negotiable pillars:

  1. Bitter base. Arugula, lamb's lettuce, endive, chicory. Never iceberg lettuce (it adds nothing and gets soggy with dressing).
  2. Bright acidity. Lime, lemon, blood orange, reduced balsamic vinegar, sherry vinegar. Cuts through the richness of smoked fish and refreshes.
