Ingredients (2 people)

  • 300 g of cod kokotxas (fresh, ideally)
  • 200 ml of mild extra virgin olive oil
  • 4 cloves of garlic
  • 1 dried chili pepper (optional)
  • Salt

Preparation

  1. Temper the oil: in an earthenware casserole or large frying pan, heat the oil over low heat with the sliced garlic. Remove the garlic when golden (not burnt).
  2. Cook the kokotxas: with the oil at a low temperature (60-70 °C), place the kokotxas skin-side up. Cook for 3-4 minutes without touching.
  3. Flip them over: carefully turn the kokotxas. Cook for another 3-4 minutes.
  4. Bind the sauce: remove the casserole from the heat and move it with constant circular movements (the famous "swinging"). The gelatin from the kokotxas will emulsify with the oil, creating a white, silky sauce.
  5. Patience: if the sauce doesn't bind, put it back on very low heat for a few seconds and remove. Repeat the swinging motion. The key is temperature: not too hot (it curdles) nor too cold (it doesn't emulsify).
