Step-by-step: how to prepare boquerones al vinagre
- Freeze (mandatory): 48-72 h at -20°C. If they come frozen from the fishmonger, defrost for 6 h in the refrigerator.
- Clean: with the defrosted anchovy, remove the head with a dry pull (the guts will come out). Open along the belly with your fingers. Remove the central bone by pulling from the tail towards the head: it will come out whole. You will have two fillets joined by the tail, butterflied.

Typical mistakes that ruin boquerones
Vinegar too strong or of poor quality. Cheap white wine vinegar (3-5° acidity) leaves the anchovies gray or brown. Use quality Sherry, Montilla-Moriles, or apple vinegar.
Marinating for more than 8 hours. They become rubbery, dry, and lose their delicate flavor. If you're going to eat them the next day, drain them from the vinegar after 6 hours and store them in oil.
Not drying them before the vinegar. If they are wet, the vinegar is diluted and the marination is uneven.
Refined oil. "Olive oil" (refined) oxidizes in a few days and leaves a metallic taste. Only extra virgin.
Storing in oil at room temperature. In summer, they ferment. Always in the refrigerator (minimum 4°C).
