Step-by-step preparation
Step 1: Dry the cod. Take the loins out of the fridge 10 minutes before cooking. Dry them very well with kitchen paper, both skin and flesh sides. This step is crucial. If the cod is wet, it won't brown: it will steam in its own moisture and become soft.

Step 2: Heat the pan. Use a cast iron skillet or a flat griddle. Heat it over high heat for 2 minutes. It needs to be very hot before adding the fish. Do not add oil to the pan yet.
