Avocado and anchovy are a perfect pair: the soft, vegetable creaminess of the avocado balances the salty and intense flavor of Cantabrian anchovies. Served on a good toast, this avocado toast with anchovies is healthy, satisfying, and full of flavor, ideal for a hearty breakfast or an informal and impressive appetizer.

Avocado toast is the star dish of contemporary brunch. And no matter how much purists dismiss it as "Instagram food," the combination of creamy avocado with salty anchovy on crispy bread is objectively delicious. The vegetable fat of the avocado envelops and softens the saltiness of the anchovy, the lemon cuts through both fats with freshness, and the sesame seeds add an unexpected crunch. It's a quick, nutritious dish with a depth of flavor you wouldn't expect from something so simple.

Ingredients

  • 4 "00" Selection anchovy fillets (we use "00" Premium Cantabrian anchovy fillets)
  • 2 thick slices of sourdough bread
  • 1 ripe but firm avocado
  • Juice of 1/2 lemon
  • Sesame seeds (white and black)
  • Chili flakes (to taste)
  • Extra virgin olive oil
  • Flaky sea salt

Step-by-step preparation

  1. Toast the sourdough bread. Sourdough has a thick crust that crunches and a dense crumb that supports the weight of the avocado without falling apart. Sandwich bread gets soggy and turns into wet cardboard.
  2. Cut the avocado in half, remove the pit. With a fork, mash the pulp directly onto the toasted bread, leaving irregular chunks (not a smooth puree). Add lemon juice and a pinch of salt.
  3. Place 2 anchovy fillets on each toast, slightly curved. Sprinkle with sesame seeds, chili flakes, and a drizzle of oil. Serve immediately.

Our secret tip

The avocado should be ripe but firm: it should yield to pressure but not sink in. If it's brown inside, the flavor is rancid and not even the best anchovy in the world can save it. Gently squeeze before buying. And the lemon is not just to prevent oxidation: its acidity creates a flavor bridge between the fat of the avocado and the salt of the anchovy.
