Fish in Air Fryer: Crispy Recipes Without Oil

How an air fryer really works with fish

An air fryer doesn't fry. It's a compact convection oven with a powerful fan that circulates hot air at high speed (up to 70 km/h) around the food. The difference from a conventional oven is the concentration: the small space and intense airflow produce the Maillard reaction (browning) more quickly and uniformly.

With fish, this has advantages and limitations. The advantage: you get a crispy exterior with a fraction of the oil. The limitation: fish is a delicate food, with a water content of 60-80% and proteins that denature quickly. If you overcook it, you get dry cardboard. If you undercook it, the breading is soft.

The perfect cooking window for fish in an air fryer is narrow — usually between 8 and 14 minutes depending on thickness. There's no room for distractions.

Basic rules: temperature, time, and thickness

Rule of thumb: 4-5 minutes per centimeter of thickness at 190°C. Measure the thickest part of the fillet.

Target internal temperature: 63°C in the center. If you have a kitchen thermometer, use it — it's the most accurate tool. Fish cooked to 63°C is done but juicy. At 70°C, it already starts to dry out.

Breaded cod in the air fryer

Cod (Gadus morhua) is ideal for the air fryer due to its firm, white, and consistent texture that doesn't fall apart with hot air.

Ingredients (2 servings):

  • 2 desalted cod loins (about 200g each, 2.5-3cm thick)
  • 80g all-purpose flour
  • 1 beaten egg
  • 100g panko (Japanese breadcrumbs)
  • Olive oil spray
  • Salt, pepper, sweet paprika

Instructions: Thoroughly dry the cod with paper towels (moisture prevents crispiness). Season with pepper and paprika. Dredge in flour, egg, and panko, pressing firmly. Spray with oil on both sides. Place in the air fryer basket without overcrowding. Cook at 190°C for 12 minutes, flipping halfway at 6 minutes.

Result: Golden and crispy exterior, juicy and flaky interior. Panko is key — fine breadcrumbs become dense and less crispy with air.

Salmon with spice crust

Salmon (Salmo salar) is the fish that works best in an air fryer without any breading. Its natural fat content (11-14g/100g) allows the surface to brown and caramelize on its own.

Ingredients: 2 salmon fillets with skin (180g each), 1 tablespoon Dijon mustard, 1 teaspoon honey, spice mix (dried dill, smoked paprika, garlic powder, black pepper), salt.

Instructions: Mix mustard with honey and spread on the top of the salmon (not the skin). Sprinkle spices over the mustard layer — it acts as an adhesive. Place in the air fryer with the skin side down. 190°C, 10 minutes. No need to flip.

The crispy skin trick: If you want crispy skin like "salmon crackling," flip it over for the last 2 minutes (skin side up) and increase to 200°C. The subcutaneous fat melts and the skin toasts.

Crispy homemade fish sticks

Industrial fish sticks contain 40-55% real fish. Homemade ones contain 100%. The difference is vast.

Ingredients (20 sticks): 400g skinless, boneless cod or hake, 100g panko, 50g flour, 1 egg, 1 teaspoon garlic powder, 1 teaspoon sweet paprika, oil spray, salt.

Instructions: Cut the fish into 8x2 cm sticks. Season the flour with garlic powder and paprika. Dredge the sticks in flour, egg, and panko. Spray with oil. Air fryer at 200°C for 8-10 minutes, flipping halfway. Serve with aioli or homemade ketchup.

For kids: This is the recipe that turns kids who "don't eat fish" into fans. Homemade fish sticks don't have that spongy industrial texture that many adults also dislike.

Breaded hake in the air fryer

Hake (Merluccius merluccius) is more delicate than cod. Its flesh tends to flake, so the trick is to use thick fillets and handle them as little as possible.

Ingredients: 2 thick hake fillets (at least 2 cm), 80g breadcrumbs mixed with lemon zest and dried parsley, 1 egg, flour, oil spray, salt and pepper.

Instructions: Dry the fillets very well. Bread them (flour-egg-breadcrumbs with lemon). Spray generously with oil. Air fryer at 195°C, 10 minutes, flip after 5 minutes. The lemon zest perfumes the breading, eliminating the need to serve lemon separately.

"Grilled" fish in the air fryer

You don't need breading for everything. The air fryer can simulate a very hot griddle if you know how.

The technique: Preheat the air fryer to 200°C for 3 minutes (empty). Pat the fish dry with paper towels, brush with a thin layer of olive oil, and season. Place directly in the basket. Cook for 8-10 minutes depending on thickness. The result is not identical to a griddle (you won't get grill marks), but the cooking is excellent: slightly toasted exterior, juicy interior.

Works best with: Salmon, tuna (seared, leaving it pink inside: 6 minutes at 200°C for a 2 cm fillet), sea bass, sea bream.

Frequently asked questions

Which fish is best for an air fryer?

Firm-fleshed fish: cod, salmon, tuna, swordfish, monkfish. They withstand the airflow without falling apart. Soft-fleshed fish (thin sole, anchovy) are more difficult — they need a protective breading or a fine mesh basket.

Is air-fried fish healthier than deep-fried?

In terms of fat absorbed, yes: a breaded, deep-fried fillet absorbs 10-15% of its weight in oil, while in an air fryer it absorbs less than 2% (only from the spray). But the total caloric difference is moderate — about 100-150 kcal less per serving. It's not a "fat-free" food, but it is objectively less fatty.

Can frozen fish be cooked directly in an air fryer?

Yes, and it works surprisingly well. Do not thaw: place the frozen fish directly and add 3-4 minutes to the total cooking time. Frozen fish sticks (homemade or commercial) turn out especially well: 12-14 minutes at 200°C from frozen.

What do I do if my air fryer smells like fish afterward?

Wash the basket and tray with hot water, soap, and a splash of vinegar. If the smell persists, heat the empty air fryer to 200°C for 5 minutes with a lemon slice inside. Citric acid neutralizes the volatile amines responsible for the fishy smell (trimethylamine).

Is it necessary to use parchment paper in the basket?

It's not essential, but it helps with delicate fish that tend to stick. Use perforated parchment paper (specific for air fryers) that allows air to pass through. Never use plastic wrap or sealed aluminum foil that blocks convection.

Can I cook more than one type of fish at once?

Only if they have similar cooking times. A thick salmon and a thin hake fillet in the same batch is a recipe for disaster: the hake will be dry by the time the salmon is perfectly cooked. If the times differ by more than 2 minutes, cook separately.
