Grilled Razor Clams with Garlic and Parsley

Ingredients for 4 people

  • 16-20 fresh razor clams (4-5 per person as a tapa)
  • 4 cloves garlic, very finely minced
  • Plenty of fresh parsley, chopped
  • Extra virgin olive oil
  • 1 lemon
  • Maldon salt or flake salt
  • Black pepper (optional)

Step-by-step

Step 1: Prepare the paste. In a bowl, mix: finely minced garlic, plenty of chopped parsley, 4-5 tablespoons of extra virgin olive oil, and the juice of half a lemon. Stir and set aside. This paste is poured over the hot razor clams when removed from the grill.

Step 2: Heat the grill to maximum. It's essential that the grill is scorching hot before placing the razor clams. If you drop a speck of water and it sizzles immediately, it's ready. Do not add oil to the grill — the razor clams have enough moisture themselves.

Step 3: Place the razor clams (2-3 min). Place the razor clams directly on the grill, with the opening facing up. In 1-2 minutes, they will begin to open due to the heat. DO NOT FLIP THEM — they cook on only one side. When the meat has detached from the shell and looks firm and opaque, they are ready.

Step 4: Paste and serve. Transfer the razor clams to a serving dish. Pour the garlic and parsley paste over them while they are hot (the heat from the razor clams will lightly cook the garlic). Add Maldon salt flakes and serve with half a lemon, cut into wedges.

Key tips

  1. Maximum heat: The most common mistake is cooking on medium heat. Razor clams need brutal heat and little time. On medium heat, they boil in their own juices and become rubbery.
  2. Do not flip: They cook on only one side. The top part cooks with the steam from their own juices.
  3. Raw garlic in the paste: The garlic is not sautéed — it goes into the oil raw. The heat from the razor clam tempers it just enough to soften its pungency without losing freshness.
  4. Salt at the end: Maldon or flake salt directly upon serving. Razor clams already have natural salinity from the sea.
  5. No purging: Razor clams do not need purging like clams. Simply rinse them under the tap.

How to choose fresh razor clams

Quality razor clams are identified by:

  • Weight: They should feel heavy for their size. Light weight = little meat.
  • Reaction: When touched, they should retract their foot (the part that protrudes). If they don't react, they are dead.
  • Smell: Of fresh sea, never ammonia.
  • Origin: Those from Galicia (Rías Baixas) are the most prized for their size and flavor. Those from Huelva are also excellent.
  • Size: For grilling, choose medium-large ones. Small ones will overcook in seconds.

The perfect paste

The difference between decent grilled razor clams and memorable ones lies in the paste. These are the best paste variations:

Variations

  • Baked: Preheat to 250 °C, place razor clams on a tray, 3-4 minutes. More uniform than grilling but without the smoky char.
  • With ham: Place a slice of Iberian ham over each open razor clam for the last 30 seconds. The ham will melt slightly with the heat.
  • Gratinated: Cover with breadcrumbs, garlic, and parsley and gratinate for 2 minutes under the broiler.

In a cast-iron skillet over maximum heat, it works well. Avoid non-stick pans — they don't reach the necessary temperature for the smoky char.

Can I use canned razor clams?

For direct consumption, yes, but not for grilling. Canned razor clams are already cooked. Serve them at room temperature or warm with the paste on top, without grilling.

Why shouldn't I flip them?

Because the juice they release cooks them from above (like internal steam). If you flip them, that juice is lost on the grill and the meat becomes dry. Only one side, always.
