Caviar in Spain? The surprise that shouldn't be one

When you say "Spanish caviar," most people raise an eyebrow. Spain is not the first country that comes to mind when thinking of sturgeon and salted roe. But it should be, because the data tells a different story.

Spain has been producing quality sturgeon caviar since the 90s. It has exceptional geographical conditions for sturgeon aquaculture: extremely pure mountain meltwater (Riofrío, Granada), mountain rivers with constant temperatures (Lleida), and technical know-how that has matured over three decades.

Spanish caviar has progressively gained international recognition. It has appeared in the kitchens of three-Michelin-star restaurants, been selected by caviar sommeliers in London and Paris, and won medals in international competitions. It is not a tourist product or a souvenir: it is real, competitive caviar.

The advantage of Spanish caviar for the Spanish consumer is threefold: price (no import costs or international logistics), freshness (24-48h delivery from the farm), and traceability (you can visit the farm if you wish). There are no Iranian intermediaries, no opacity in the chain — you know exactly what you're eating and where it comes from.

Riofrío Caviar: Granada and organic sturgeon

Cría de Riofrío S.L., located in the town of Riofrío (Granada), is probably the most internationally known Spanish caviar producer. Its history began in 1963 when the De Melo family established a trout farm fed by the natural springs of the Sierra de Loja. In the 90s, the company made the leap to sturgeon.

What makes Riofrío special is its water. The springs of the Sierra de Loja produce water at a constant temperature of 14-15°C throughout the year, with exceptional purity and mineralization. The sturgeons grow in ponds fed by gravity with this water, without the need for pumping or treatment. It's the equivalent of growing grapes in a prime terroir: the basic raw material is superior.

Riofrío obtained organic certification for its caviar, becoming one of the first producers in the world to do so. The certification implies: non-GMO feed, no use of preventive antibiotics, limited stocking density, and complete traceability from fry to tin. Riofrío's organic caviar is a product with a clear value proposition for the conscious consumer.

Riofrío's production focuses on Acipenser naccarii (Adriatic sturgeon, related to Baeri) and Acipenser baerii. Their caviars have a smooth, clean profile, with hazelnut notes and controlled salinity. They are not the most complex on the market but are extraordinarily consistent and pleasant.

Estimated prices (2026): 30g of organic Riofrío caviar ranges from €30-€50, depending on the variety and retailer.

Nacarii Caviar: the Catalan bet

Caviar Nacarii operates from Torres de Segre (Lleida), in the Catalan Pre-Pyrenees. The farm uses water from the Segre River, a tributary of the Ebro with meltwater from the Pyrenees. Founded in 1998, it is the other great benchmark for Spanish caviar.

Nacarii works with Acipenser baerii (Siberian sturgeon) and has developed a production protocol that prioritizes long sturgeon maturation. Its females are kept for 8-10 years before the first extraction, above the minimum of 5-7 years allowed by aquaculture conditions. This patience is reflected in the grain size and the complexity of the flavor.

Nacarii caviar has a more defined flavor profile than Riofrío's: more pronounced nutty notes, a touch of butter, and a mineral background that reflects the characteristics of the Pyrenean water. It is a Baeri with personality, not a generic Baeri.

Nacarii has also opted for direct online sales, eliminating intermediaries and offering very competitive prices for its quality level. A 30g tin is priced at €25-€40, making it one of the best entry-level authentic caviar options in the Spanish market.

Little-known fact: Nacarii has started an Oscietra (Acipenser gueldenstaedtii) production program, with the first specimens currently maturing. Initial results are promising and could position Spain as a high-end Oscietra producer in the coming years.

Other Spanish producers

Although Riofrío and Nacarii dominate the Spanish market, other projects deserve attention:

Caviar de l'Alt Empordà (Girona): a more recent project, with Baeri production in the waters of Empordà. Limited but growing production.

Piscifactoría de Sierra Nevada: various sturgeon projects in the Granada area that complement Riofrío's production. The water quality of Sierra Nevada is excellent for aquaculture.

The Spanish caviar sector is growing, with new projects that take advantage of the Peninsula's exceptional water conditions. Spain's aquaculture tradition (one of Europe's largest trout producers) provides a solid technical base for sturgeon farming.

Sturgeon species cultivated in Spain

Spanish production is concentrated on two main species:

Acipenser baerii (Siberian sturgeon): the dominant species. Matures in 5-7 years under Spanish conditions, adapts well to mountain water, and produces an accessible and consistent caviar. It is the species that has made the Spanish industry economically viable.

Acipenser naccarii (Adriatic sturgeon): cultivated mainly in Riofrío. It is an indigenous species of the western Mediterranean (historically present in the Guadalquivir) that produces roe with a slightly different profile from Baeri — softer, with more herbaceous notes.

Acipenser gueldenstaedtii (Oscietra) is under development in Spain, with the first females maturing in Nacarii. If the results confirm viability, Spain could have commercial-scale Oscietra production in 3-5 years.

Huso huso (Beluga) is not currently produced in Spain. The 18-25 year cycle until sexual maturity and the required investment make it unfeasible in the short term for the Spanish industry, which is still young and consolidating its position with shorter-cycle species.

How does Spanish caviar compare to Iranian or Italian caviar?

The honest comparison, without jingoism:

vs. Iranian caviar: Spanish caviar (Baeri) does not directly compete with Iranian caviar (Beluga/Oscietra) in the same category. They are different species with different profiles. Iranian has more complexity and prestige. Spanish has better price and traceability. If we compare Baeri with Baeri, Spanish is competitive in quality with any Baeri in the world.

vs. Italian caviar (Calvisius, Giaveri): Italians have been in sturgeon aquaculture for more years and have Oscietra and Beluga production that Spain does not yet have. In Baeri, the comparison is more balanced: Italian is marginally more consistent at the high end, but Spanish offers better value for money. The difference is small and shrinks every year.

vs. French caviar (Kaviari, Sturia, Petrossian): France has a huge marketing and distribution advantage. French caviars are sold at premium prices thanks to the country-brand and the distribution network in high-end restaurants. In objective product quality, Spanish competes perfectly with equivalent French caviar, but at 20-30% less price.

The conclusion is clear: Spanish caviar is one of the best options on the market in terms of value for money. It does not have the aura of Iranian caviar or the distribution of Italian or French, but the product inside the tin is top-notch.

At €25-€50 for 30g (enough for two people), Spanish caviar transforms an experience perceived as unattainable into something perfectly reasonable for a special dinner. It's less than a bottle of premium wine and offers a comparable gastronomic experience.

Where to buy Spanish caviar

Direct from the producer: both Riofrío and Nacarii sell online directly. It is the most economical option and guarantees maximum freshness. Refrigerated delivery in 24-48h throughout the Peninsula.

Specialty stores: delicatessens and gourmet shops usually have at least one Spanish caviar reference. In Barcelona, at Bacalalo (Mercat del Ninot) you can find Spanish and other origin caviar with direct advice.

El Corte Inglés: the gourmet sections of major centers usually stock Riofrío. Prices are slightly higher than direct sales but with the convenience of a large department store.

Restaurants: more and more medium-high-end Spanish restaurants include Spanish caviar on their menus, both as an ingredient in dishes and for direct tasting. Always ask about the origin — a restaurant that works with Spanish caviar and states it is a sign of quality and discernment.
