Quick answer: Homemade marinated anchovies (boquerones en vinagre) are not recommended during pregnancy due to the risk of anisakis if not frozen correctly. Can you eat marinated anchovies during pregnancy?

Short answer: it's best to avoid them. Health authorities (AESAN, WHO) recommend not consuming raw, marinated, or cold-cured fish during pregnancy due to two risks:

  • Anisakis: a parasite that survives vinegar and salt. It only dies with freezing at -20 °C for 24-48 hours or cooking above 60 °C.
  • Listeria monocytogenes: a bacterium capable of growing in cold conditions, especially dangerous for the fetus.

Marinated anchovies (boquerones en vinagre) are not technically cooked: the acid from the vinegar changes the texture but does not biologically sterilize the fish.

Anisakis risk: what science says

Spanish regulations (Royal Decree 1420/2006) require fish to be frozen at -20 °C for at least 24 hours if it is to be consumed raw, marinated in vinegar, cold-smoked, or salted under conditions that do not guarantee the parasite's death.

The problem: this regulation applies to restaurants and industrial production, but homemade marinades in many households do not follow this step. And even if the industrial brand does it correctly, AESAN still recommends avoiding raw/marinated fish during pregnancy due to the precautionary principle.

Listeria risk

Listeriosis has a low incidence, but the risk of fetal complications is high: miscarriage, premature birth, neonatal infection. The WHO recommends that pregnant women avoid:

  • Cold-smoked fish (salmon, trout).
  • Marinated or cold-cured fish (marinated anchovies, mojama, ceviche).
  • Raw shellfish.
  • Unpasteurized soft cheeses with a rind.

Marinated anchovies (boquerones en vinagre) fall squarely into this list of products to avoid.

Safe alternatives during pregnancy

  1. Grilled anchovies: 3-4 minutes over high heat. Same essence, zero risk.
  2. Baked anchovies with tomato: 12-15 minutes at 180 °C.
  3. Canned sardines (sterilized in a can): safe and nutritious.

If you miss them: tips

To mimic the acidic profile of marinated anchovies with cooked fish:

  • Cook the anchovies on the grill and finish them with a touch of hot sherry vinegar.
  • Sear the anchovies in the oven and season with lemon, raw garlic, and parsley.
  • Steamed anchovies + vinegar reduction + EVOO = similar texture, no risk.

Common mistakes during pregnancy

  • "I froze it at home, it's fine": domestic freezers rarely reach a true -20 °C. They are usually between -15 and -18 °C, insufficient to guarantee the parasite's death in 24 hours.
  • "Industrial ones are safe": they reduce anisakis risk but do not eliminate listeria risk.
  • "If the restaurant serves them, they are safe": the restaurant may comply with regulations for the general population, not for pregnant women.
Can I eat marinated anchovies during pregnancy?
