What is smoked cod: real definition
Smoked cod is cod loin (Gadus morhua or, in some cases, Gadus macrocephalus) that goes through three stages:
- Dry salting or brining for 6-24 hours. Salt extracts water, binds proteins, and prepares the meat for smoking.
- Smoking with noble woods (beech, oak, alder) for 4-12 hours depending on the method.
- Curing or resting for 24-72 hours in a cold room for the flavor to settle.
The result has a pinkish-white, not brown, color. If the smoked cod you buy is dark brown, it is over-smoked or contains coloring.
Cold smoking vs hot smoking
This is the first key distinction that many brands do not communicate well:

The best-selling format. Thin slices (1-3 mm) in olive or sunflower oil. Ideal for opening and serving directly on toast, salad, or canapé. Size 100-200 g per package.

Real smoke vs smoke aroma: how to detect it
This is the most common trap of industrial smoked cod. There are three ways to tell if what you are buying is real smoked or flavored:
- Read the ingredient list. If it says "smoke flavor," "liquid smoke," or "E-150d (burnt sugar caramel)," it is not real smoked. If it says "natural smoke" or "smoked with beech/oak woods," it is.
- Look at the color. Real smoked is uniformly pinkish-white. Flavored with aroma usually has an intense brown color only on the edges, white inside.
- Smell. Real smoke has a fine wood scent. Smoke aroma smells chemical, almost like perfume.
Origins: Iceland, Norway, Mediterranean
Smoked cod in the Spanish market comes from three main origins:
- Iceland: Gadus morhua cod from cold waters, firm and white flesh. The Icelandic smoking industry has been around for 200 years. Premium quality and clear traceability.
- Norway: also Gadus morhua, similar to Iceland but with a more recent smoking tradition. Excellent for cold smoking.
- Mediterranean (Catalonia, Galicia): artisan smokers buy Icelandic or Norwegian cod and smoke it locally with native woods. Quality varies greatly depending on the artisan.
Casa Santoña and other industrial brands that centralize smoking usually have their own workshop in Cantabria. The difference with an artisan smoker from Mercat del Ninot lies in the scale and human control of each batch.

Toasted bread, spread with grated ripe tomato, flake salt, extra virgin olive oil, and two slices of smoked cod on top. Ready in 3 minutes. If you want to elevate it: a pinch of sweet paprika or a basil sprout.
2. Carpaccio with capers and dill
Spread the smoked cod carpaccio on a large plate, drizzle with olive oil, small capers, chopped fresh dill, and a few drops of lemon. A party starter in 2 minutes.
