The waters of the Rías Baixas (Pontevedra, Vigo) are the most prestigious: cold temperatures, rich currents, abundant crustacean food. Octopus here is firmer, with large suckers and intense flavor.

Galician octopus is caught with pots — traditional traps that the octopus enters and cannot leave. It is selective fishing, without damage to marine ecosystems. Trawling (Morocco, Vietnam) is less sustainable and harms the product.

  • Coarse salt
  • Sweet and spicy paprika
  • Traditional wooden plate (important for flavor)

Quick preparation:

  1. If fresh, "frighten" the octopus 3 times in boiling water, then cook for 45 min over medium heat
  2. If ready-to-eat cooked: heat for 5 min in boiling water or microwave
  3. Cut into 1cm slices with scissors
  4. Arrange over cooked cachelo potatoes
  5. Drizzle with EVOO, coarse salt, sweet paprika + a touch of spicy
