Blind Test Methodology
We bought 8 cans of pickled mussels in supermarkets (Mercadona, Carrefour, El Corte Inglés) and specialized stores. We blind-tasted them with a panel of 5 evaluators.
Criteria evaluated: uniform size and caliber, texture, escabeche flavor, mussel quality, oil/mussel ratio, price per gram (efficiency).

1. Real Conservera Española (Galicia) — 9.2/10. 120g can, large uniform mussels, aromatic escabeche with bay leaf and quality vinegar, EVOO. €8.50/can. Absolute premium.
2. La Brújula — 8.5/10. Medium-large mussel, traditional escabeche. €5.50/can. Excellent value for money.
3. Maruxia (Galicia) — 8.3/10. Traditional Galician with a paprika base. €4.80/can.
4. Hacendado premium Mercadona — 7.2/10. €2.80/can. Good value.

What to look for in a good can
Label: origin "Rías Baixas Galicia" or "Cangas/Cambados". If it only says "mussels Spain" or "mussels EU", be suspicious.
Caliber: "medium" or "large" is better than unspecified. "Extra" is premium.
Oil: extra virgin olive oil > olive oil > vegetable oil. Oil is 30-40% of the product: it makes a big difference.
Preservatives: no E-202, E-211. The best brands don't need them.
Simple ingredients: mussel, oil, vinegar, salt, spices. If there are 10 ingredients, be suspicious.
Uses and pairing
Alone as a tapa: on a plate with toothpicks, with their own escabeche on top. Toasted bread and lemon on the side.
In Galician empanadas: they fill empanadas with a sofrito of onion and pepper.
On roasted potatoes: modernized "chef's tapa" style version.
