Cod burger with white sauce

A cod burger? Yes, and it's one of the most fun and healthy ways to eat fish. Shredded cod is mixed with potato or bread and aromatics to form a juicy burger, which we top with a creamy white sauce. Original, light, and perfect for getting little ones to eat fish without complaining. Seafood cuisine in a modern format.

Ingredients

  • 400 g desalted shredded cod (we use Desmigado Extra de Bacalao Desalado - 500g)
  • 200 g cooked potato
  • 1 egg
  • Parsley, garlic, breadcrumbs
  • 4 hamburger buns
  • Confit onion: 2 julienned onions, oil, sugar, salt
  • White sauce: 150 g Greek yogurt, grated garlic, lemon, oil, salt

Step-by-step preparation

  1. Finely julienned onion over very low heat with oil, salt, and sugar, 25-30 min.
  2. Mix yogurt, garlic, lemon, oil, salt. Refrigerate.
  3. Poach cod for 5 min, shred. Mix with potato, egg, garlic, parsley, breadcrumbs. Form 4 burgers. Refrigerate for 15 min.
  4. Pan-fry over medium-high heat, 4 min per side.
  5. Toasted bun + lettuce + burger + confit onion + white sauce.
