Our traditional dried cod sheet with bones is the perfect format for those who enjoy working with cod "the old-fashioned way": in a large piece, with all its flavor and texture intact. We start with Gadus morhua cod from cold waters , cured in salt in the traditional style, to achieve a firm, flavorful flesh with that gelatinous quality so appreciated in cooking.

The leaf, being a wide and flat piece, is ideal for stews, soups, pil-pil sauce, one-pot meals, baked cod, or cod prepared in the Basque style . The bones add extra flavor to the broth and sauce, making it highly valued in home kitchens and restaurants seeking a rich and authentic result.
