How to Cook Frozen King Crab: Professional Technique

Frozen King Crab: the commercial format

King crab (Paralithodes camtschaticus) that reaches Europe is almost always pre-cooked frozen legs. The crab is caught in Alaska, Kamchatka, or northern Norway, immediately steam-cooked on the boat, frozen at -40°C, and shipped.

This greatly simplifies home preparation: it's already cooked, you just need to thaw and heat. It does NOT require 30 minutes of boiling like a live lobster.

Correct Thawing (key to success)

Correct method: 24 hours in the refrigerator, in its original packaging or on a tray with absorbent paper underneath.

Quick method (not ideal): hermetically sealed bag submerged in COLD water, change water every 30 min, 2-3h total.

NEVER: thaw at room temperature (bacterial risk), in hot water (ruins texture), microwave (meat cooks).

After thawing: use within a maximum of 24 hours. Do NOT refreeze.

3 Cooking Techniques for Thawed Crab

1. Steaming (recommended): steamer with boiling water, legs inside for 8-10 min. Serve hot with melted butter.

2. Quick boil: submerge legs in boiling salted water for 5 min. Drain, serve.

3. Baked with butter and garlic: legs on a tray + 80g melted butter + 4 crushed garlic cloves + lemon + parsley. Oven 180°C for 8 min. "American food" version.

How to Serve King Crab Correctly

Equipment: large wooden board, crab crackers or tongs, picks to extract meat, butter bowls, large napkins (it's "messy" food).

Classic accompaniments:

  • Melted butter with lemon: 100g salted butter + juice of half a lemon + 1 crushed garlic. Serve hot in a bowl.
  • Dijon mustard sauce: 100g mayonnaise + 2 tsp Dijon mustard + 1 tsp Sherry vinegar. For dipping.
  • Side dishes: roasted potatoes with rosemary, fresh green salad, rustic toasted bread.

Does king crab have mercury?
Low levels (<0.1 mg/kg). Safe for regular consumption, including during pregnancy. Better than large predatory fish.
How to open the crab shell?
The legs come already split by the producer (longitudinal cuts). Just open with crackers or tongs, extract meat with a pick. NO professional tools required.
