Step-by-step (45 minutes traditional)

  1. Desalting: 24-36h in cold water with changes, drain.
  2. Cut tripe: into regular 3-4 cm pieces.
  3. Soffritto: brown onion in EVOO for 8 min, add garlic and pepper, sauté for 5 more min.
  4. Chorizo: add the slices, sauté for 2 min to release their paprika.
  5. Paprika: add off the heat, stir for 30 seconds without burning.
  6. Tomato: add and cook for 8-10 min until water evaporates.
  7. Wine and broth: pour in, bring to a boil.
  8. Tripe: add along with bay leaf. Reduce to low heat.
  9. Cook 30 minutes: covered over minimum heat. Check salt level (tripe is already salted from desalting).
  10. Rest: 10 minutes off-heat. Better if left overnight.
  11. Serve: hot with fresh parsley and rustic bread.

Regional variations

Bilbao Style (traditional): with chorizo and sweet paprika. More reddish, hearty.

Navarra Style: with piquillo peppers and red wine instead of white. Deeper color.
