The most succulent part of the dried cod, with the bone in for a truly rich broth. The traditional dried cod tail with the bone is a highly prized cut for its firm flesh and the gelatinous parts around the bone, which result in richer sauces and full-bodied broths .

It comes from North Atlantic cod (Gadus morhua) , cured in salt using traditional methods. The tail is one of the areas of the cod with the greatest muscle movement , resulting in meat with a firm and juicy texture that withstands long cooking times perfectly without losing structure or flavor.

It's ideal for preparing baked cod, cod à la Vizcaína, cod pil-pil , potato stews with cod, rice dishes, soups, or other hearty dishes . The cod can be cooked whole or cut into pieces, using the bone to enhance the flavor of the broth and removing it at the end of cooking. That natural gelatin surrounding the bone is what makes the difference between a decent stew and a truly delicious one.
