The gilda: history of a legendary pintxo
The gilda was created in the 1940s at Bar Casa Vallés in San Sebastián , named after Rita Hayworth because it was "green, salty, and a little spicy." Since then, it has become the most emblematic pintxo in the Basque Country .
Our version respects the original essence but elevates the ingredients: gourmet quality Cantabrian anchovies , carefully selected olives and Ibarra peppers with just the right amount of spice.
Three gildas, three personalities
Anchovy Gilda : The classic Basque dish. Cantabrian anchovy, olive, Ibarra pepper, and sun-dried tomato. Intense and addictive.
Gilda de Boquerón : A Mediterranean version with marinated anchovies, olives, chili peppers, and bell peppers. Milder and fresher.
Gilda de Queso : The surprise. Cured cheese, olive, chili pepper, and sun-dried tomato. Creamy and full of character.
