Caviar pairing rules

Caviar has a delicate and complex flavor: marine, slightly salty, with notes of butter and hazelnut. The drinks to accompany it should:

  • Cleanse the palate between bites without adding competing flavors
  • Be cold: between 2-6°C
  • Have acidity or neutrality: not excessive sweetness
  • Contain no tannins: wood tannins destroy the delicacy of caviar

The best drinks

Vodka: Russians and Persians have been pairing caviar with vodka for centuries, and it's no coincidence. Quality vodka is almost neutral, very cold, and cleanses the palate without adding competing flavors. The caviar "tastes on its own" between sips of chilled vodka. Recommended: premium Russian or Polish vodka, served at -18°C.

Blanc de Blancs Champagne: 100% Chardonnay, without Pinot Noir, has the perfect acidity and minerality. The bubbles cleanse the palate and the absence of red fruit notes avoids conflicts. Avoid heavily dosed champagnes (more than 10g/L) or rosé.

What to avoid

  • Wines aged in wood (crianza, reserva): tannins destroy the texture
  • Sweet wines: sugar flattens the complexity of caviar
  • Beer: bitter hops clash with the iodized notes
  • Juices or fructose drinks: alter the saline perception

What to serve it with

  • Warm blinis with crème fraîche (classic Russian)
  • Salt-free white bread toasts with cold butter
  • Warm soft-boiled egg (creamy yolk + caviar is sublime)
  • Cold boiled potato with sour cream
  • Avoid: lemon, raw onion, strong acidic flavors

Is champagne the best pairing for caviar?
Blanc de Blancs champagne is excellent, but chilled vodka is the traditional and arguably the best pairing: it is completely neutral and does not interfere with the flavors of the caviar. Rosé champagne or champagnes with a lot of Pinot Noir have red fruit notes that can compete with the caviar.
Can you drink Spanish white wine with caviar?
Yes, Atlantic and mineral white wines work very well: Albariño from Rías Baixas, Godello from Valdeorras, Txakoli and young Verdejo-style white wines from Rueda (without wood). Avoid barrel-fermented whites: wood notes spoil the caviar.
Can you eat caviar without alcohol?
Yes: very cold water (still mineral water), cold sencha green tea or sparkling water without high mineralization are acceptable options. Green tea has umami that complements the caviar. Sparkling water mimics the cleansing effect of champagne bubbles.
